Zucchini Hummus with Cashews, Feta & Sundried Tomatoes✨🥒😋

A quick and easy hummus that is a little different than your standard hummus. This one is made with zucchini and @elanbio’s Organic Raw Cashews. [AD]

It has the same creamy texture of hummus along with the amazing flavours of garlic and cumin. It is topped with fresh parsley, sundried tomatoes, toasted cashews and crumbled feta.

Ingredients:
2 cups zucchini, peeled and diced
2 garlic cloves
¼ cup tahini
¼ cup @elanbio’s Raw Cashews
3 tbs. lemon juice
1 tbs. cumin
¼ tsp. paprika
pinch sea salt

Toppings:
1 tbs. olive oil
1 tbs. fresh parsley chopped
4 sundried tomatoes, chopped
2 tbs. @elanbio’s Raw Cashews, toasted & chopped
2 tbs. feta, crumbled

Directions:
Begin by peeling and dicing the zucchini. Place the zucchini, garlic cloves, tahini, @elanbio’s Raw Cashews, lemon juice, cumin, paprika and sea salt into a high-speed blender. Blend on high until creamy and smooth. Pour the zucchini hummus into a bowl and drizzle with olive oil. Sprinkle fresh parsley on top along with chopped sundried tomatoes, @elanbio’s Cashews toasted and crumbled feta. Serve with crackers or veggies and enjoy.

Houmous de courgettes aux noix de cajou, à la feta et aux tomates séchées✨🥒😋

Un houmous facile et rapide à faire qui est un peu différent du houmous standard. Celui-ci est fait avec des courgettes et des noix de cajou crues biologiques @elanbio. [AD]

Il a la même texture crémeuse que le houmous, avec les saveurs étonnantes de l’ail et du cumin. Il est garni de persil frais, de tomates séchées, de noix de cajou grillées et de feta émiettée.

Ingrédients :
2 tasses de courgettes, pelées et coupées en dés
2 gousses d’ail
¼ tasse de tahini
¼ tasse de noix de cajou crues @elanbio
3 cuillères à soupe de jus de citron
1 cuillère à soupe de cumin
¼ cuillère à café de paprika
Pincée de sel de mer

Garnitures :
1 cuillère à soupe d’huile d’olive
1 cuillère à soupe de persil frais haché
4 tomates séchées au soleil, hachées
2 cuillères à soupe de noix de cajou crues @elanbio, grillées et hachées
2 cuillères à soupe de feta, émiettée

Préparation :
Commencer par éplucher et couper les courgettes en dés. Mettre les courgettes, les gousses d’ail, le tahini, les noix de cajou crues @elanbio, le jus de citron, le cumin, le paprika et le sel de mer dans un mixeur à grande vitesse. Mixer à grande vitesse jusqu’à l’obtention d’une texture crémeuse et lisse. Verser le houmous de courgette dans un bol et l’arroser d’huile d’olive. Saupoudrer de persil frais, de tomates séchées hachées, de noix de cajou @elanbio grillées et de feta émiettée. Servir avec des crackers ou des légumes et déguster.
