The Recipes:
BERRY MUFFINS / 344 kcal / Breakfast

INGREDIENTS
Wheat flour 300 g
Baking powder 1 tsp
Salt 1 tbsp
Eggs 2
Melted butter 40 g
Honey 2 tbsp
Milk 150 ml
Strawberries 3
Frozen black currant 30 g
Raspberries 6

BAKE
190°C / 370°F
20-25 minutes

PREPARATION
Mix the wheat flour, baking powder and salt.
Add the eggs, melted butter and honey.
Pour the milk and stir until smooth and creamy.
Place the mixture in the baking shape and add the berries on top.
Put in the oven for 20-25 minutes at 190°C / 370°F.
Serve with strawberry syrup on top and enjoy!

COLORFUL SOUTHWESTERN SALAD / 557 kcal / Lunch

INGREDIENTS
Avocado 1
Parsley ⅓ bunch
Garlic 2 cloves
Lemon juice 2 tbsp
Olive oil 2 tbsp
Lettuce 1 bunch
Green and yellow bell peppers 2
Cherry tomatoes 6
Kidney beans 100 g
Corn 100 g
Green onion 30 g

CHEESY BEEF CUPS / 645 kcal / Dinner

INGREDIENTS
Cheddar 200 g
Bacon 5 slices
Jalapeño 30 g
Green onion 20 g
Sour cream 50 g
Ground beef 400 g
Salt
Paprika
Black pepper
Oregano 1 tbsp

BAKE
200°C / 400°F
25-30 minutes

PREPARATION
For the filling mix the shredded cheddar with fried bacon, jalapeño, green onion and sour cream.
Season the beef with salt, black pepper, paprika and oregano.
Make the cups out of beef and place the filling inside.
Put in the oven for 25-30 minutes at 200°C / 400°F.

For the dressing blend together the avocado, parsley, garlic, lemon juice and olive oil.
Place the cut lettuce at the bottom of the large bowl, add the bell peppers, halved cherry
tomatoes, canned kidney beans with corn and green onion.
Season the salad with the salt and black pepper.
Pour the dressing and serve!

VANILLA SHAKE / 239 kcal

INGREDIENTS
Ice
Vanilla ice cream 100 g
Lemon zest 1 tsp
Soda 150 ml

PREPARATION
Place all the ingredients in a blender and blend until smooth and creamy.
Decorate with the mint and enjoy!
