Here’s a simple falafel recipe:

Ingredients:

– 1 cup dried chickpeas, soaked overnight and drained
– 2 cloves garlic, minced

– 1 tablespoon lemon juice
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 1/2 teaspoon cayenne pepper (optional)
– Salt and pepper, to taste
– 2 tablespoons olive oil

Instructions:

1. Preheat oven to 375°F (190°C).
2. In a food processor, blend chickpeas, garlic, parsley, cilantro, lemon juice, cumin, paprika, cayenne pepper (if using), salt, and pepper until coarsely chopped.
3. Using your hands, shape the mixture into small patties or balls, about 1 1/2 inches (3.8 cm) in diameter. Place on a baking sheet lined with parchment paper.
4. Drizzle with olive oil and toss to coat.
5. Bake for 25-30 minutes or until golden brown and crispy on the outside, and cooked through.
6. Serve hot with your favorite toppings, such as tahini sauce, hummus, lettuce, tomatoes, and pickles.

Note: You can also deep-fry the falafel if you prefer a crisper exterior. Heat about 2-3 inches (5-7.5 cm) of oil in a deep frying pan over medium-high heat. Fry the falafel in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
