Chicken Marination Ingredients and Procedure:
– 4 cut chicken breast
– 1 tsp salt
– Half of a lime
– Mix around and cover for 30 minutes
1. Add 1 tsp of salt to precut chicken breast
2. Squeeze half of a lime onto the chicken
3. Mix well and cover for 15 minutes
Rice Ingredients and Procedure
– 1 cup of wild rice
– Some olive oil
– Half onion, chopped
– 2 1/2 cups of hot water
– 1 tsp of salt
1. Add some of olive oil to a pan on medium heat
2. Add half of a chopped onion into the pan
3. After the onions brown a bit, add 1 cup of wild rice
4. Mix well then add 2 and 1/2 cups of hot, already boiled water
5. Add 1/4 tsp of salt
6. Cover and let cook for ~10 minutes or until water is gone
Chicken Sauce Ingredients and Procedure:
– 1/4 cup olive oil
– 1 chopped onion
– 2 tbsp chopped ginger
– 2 tbsp chopped garlic
– 1 dried lemon
– 1 tsp salt
– 1 tsp pepper
– 1 tsp crushed coriander
– 1 tsp smoked paprika
– 1 diced tomato
– 2 tbsp of tomato paste
– 1 cup plain yogurt
– 1/4 cup hot water
– 1 cup chopped cilantro
– 1 squeezed lime
1. Add 1/4 cup olive oil to a pan on medium heat
2. Add 1 chopped onion
3. Add 2 tbsp chopped ginger and 2 tbsp chopped garlic
4. Add the chicken to the pot and mix well
5. Once chicken cooks a bit, add 1 dried lemon
6. Add 1 tsp salt, 1 tsp pepper, 1 tsp crushed coriander, and 1 tsp paprika
7. Mix well!
8. Add 1 diced tomato
9. Add 2 tbsp of tomato paste
10. Mix well and cover until tomato softens
11. Once tomato softens and is cooked, add 1 cup of plain yogurt and cover for 5 minutes
12. After the 5 minutes, add 1/4 cup of hot water
13. Cook for 5 more minutes
14. Add 1/4 cup cilantro and 1 squeezed lime
15. Mix well and that’s it! Total cook time is around 20 minutes
