These wild mushroom crab cakes are so delicious and easy to make! We made these crab cakes with wild foraged comb tooth mushrooms. The comb tooth mushroom is a close relative of the lion’s mane mushroom, so this recipe could also be used for lion’s mane mushrooms as well. These crab cakes have a delicious crab-like flavor and texture. These meatless crab cakes taste so much like real crab meat that most people would not know they weren’t eating real crab meat if you did not tell them. It’s amazing how these mushrooms can take on the qualities of crab meat!

Ingredients for this recipe:
½ lb or how ever much you have fresh comb tooth mushrooms
2 tablspoons olive oil
2 cloves garlic
2 tablespoons mayo
1 teaspoons of soy sauce
1 cup bread crumbs
¼ onion
1 egg
Parsley
Green onion
1 teaspoon paprika
Lemon juice
Salt
Pepper
