Ingredients :
4 chicken breasts, skinless , sliced in half ,lengthwise
1 bunch fresh cilantro ( rinsed and finely chopped)
2 gloves fresh garlic , minced
Juice of a lime
Paprika 2tsps
Cayenne pepper 2tsps
Olive oil 2-4 tbsps
Salt & blk pepper to your taste
Prepare the marinade, add ur chicken and refrigerate for at least an hour min
Cook each side for 3-4 mins or till internal temp is 165 degrees Fahrenheit
This marinade is very flavorful, and would work well with fish too
Corn salad
1 can whole corn kernels, drained & rinsed
1/2 small red onion, Finely chopped
A tbsp of lime juice and chopped cilantro
Salt n ppr to taste
I didn’t have scallions , those would worn great in there . You could also add some chopped green Bell ppr
Combine all and corn salad is ready
