Your ingredient list is…
from the fridge:
– ~500g Medium ground beef – you can substitute ground chicken/turkey but you’ll add an extra 2-3tbsp of olive oil to increase the fats (flavour)
– 2 carrots
-1 jalapeno pepper
-1 green pepper
-1 bunch spinach
-3 sprigs fresh oregano (or use 1 tsp dried oregano)
-3 sprigs fresh thyme (or use 1/2 tsp dried thyme)
-1/2 bunch curly parsley (1-2 tbsp dried parsley)
– 2-3 tbsp of fresh parmesan cheese (to taste/garnish)
– 1/2 cup fresh whipping cream
from your pantry:
– 2 bay leaves
-28 fl oz tin of diced tomatoes
-1L container of broth – you may not use all of it in this recipe
– 1 large white onion
– 3-4 cloves of garlic
– 2 (+3 if using lean meat) tbsp olive oil
– 2 tbsp paprika
-500g bag of dried penne rigate pasta
– salt / pepper to taste. [fresh ground pepper is best; i use coarse sea salt.]
-2-3 tbsp of red wine OR 1/2 tbsp red wine vinegar
– plus one large container to reserve half the sauce and freeze for a second meal.
