In this video I take you through everything I eat in a day! Today’s video also features some recipe testing! I decided I wanted to try make a healthy white choc pistachio blondie, so that was super fun to create! I love trialling new combinations in the kitchen! They don’t always work but this one was a winner 🙂 See below for recipes and approximate nutritional info ⬇

1:32 BREAKFAST
1/2 cup + a bit extra quick oats
1 cup + a bit extra water
1/2 banana
1 handful of frozen blueberries
1/4 tsp vanilla bean paste
sprinkle of cinnamon
1 heaped tsp almond butter
a sprinkle of hemp seeds and coconut

2:54 LUNCH
1 serve sweet chilli tofu
1/2 large sweet potato (cooked in the oven for 30-40 mins)
2 handfuls of spinach
1 small cucumber
1 handful fresh mint
some red cabbage
1 small carrot (grated)

3:57 BLONDIES

6:41 DINNER
I didn’t really follow a proper recipe when I made this today but the basic ingredients are:
Olive oil
Brown onion
Rice (or you could use quinoa)
Diced tomatoes (or tomato sauce)
Paprika
Mixed herbs
Vegetable stock
Lentils
Parsley
Capsicums

Another blondie + decaf coffee (with Oatly)

DAILY NUTRITIONAL INTAKE (approximated)
Energy: 1627kcal (this is a bit lower than usual because I didn’t do much exercise today so I wasn’t overly hungry)
Protein: 64g
Carbs: 225g
Fat: 56g
