Banana Oat Pancakes
makes 6 pancakes
2 ripe bananas
1 cup oat flour
1/2 cup oats
3 tbs chia seeds
Chocolate chips optional
about 1/2 cup plant milk
Mash bananas, mix in all other ingredients. In a preheated pan, cook pancakes for about 5 min each side. Top with toppings of your choice. Enjoy
Mock Tuna
1 can rinsed chickpeas
Cut fruit and pickles of your choice
1 tbs tahini
A bit of lime juice
Salt and pepper to taste
Mash chickpeas with a fork, mix in all other ingredients. Enjoy
I love this with Mary’s gone crackers, but I am sure it is delicious on some bread as well
Sweet Potato/ Lentil stew
1 big sweet potato
1 1/2 cups red lentils
1 bunch of kale. You can also use spinach
2 heaping tbs almond butter
1 can diced tomatoes
1 onion
3-4 garlic gloves
1/2tsp each of cumin, garlic powder, coriander, paprika, turmeric
Salt to taste
1/4 tsp cayenne pepper
3 cups or slightly more of vegetable broth or water
If using water, use a vegetable bullion.
Dice onion, mice garlic and saute both in a bit of water. Cut potatoes into small pieces and add to the pot. Add all other ingredients, minus the kale, mix well, bring to a boil. Cover and simmer for about 30 min or until potatoes are soft. You might have to add a bit more water or vegetable broth, if the stew gets to thick
Cut kale and add to the pot. Mix well and cook for another minute or two.
