Hey everyone!
In this video, Callum shows us how to smoke some meaty pork ribs in the Oklahoma Joe’s Bronco drum smoker. These aren’t your traditional pork ribs, these are Vietnamese style, packed full of amazing flavours and finished with a caramel fish sauce!
Something you all need to try, especially if you are looking for something different….
Our rib method is quite simple, smoke at around the 275-300F mark until you are happy with the colour, usually around the 2 hour mark we’re happy. Then wrap them up in foil, you can use some apple juice or butter, brown sugar, apple cider vinegar, beer or a combination of any of that! Keep them wrapped until they get to around the 200-210F internal mark, they should be probing nice and tender. Then unwrap, sauce, let the sauce set, slice and serve!
Rub Recipe:
We usually make up enough to store for a few cooks. This recipe was 2 tablespoons each of the following… Onion powder, garlic powder, chilli flakes, ground ginger, ground coriander and Hungarian sweet paprika. Then we added 1 tablespoon of cracked black pepper and white sugar.
Put all of the above in a bowl or jar and mix thoroughly.
Sauce Recipe:
– 3 cloves of minced garlic
– 1 small shallot finely diced
– 2 teaspoons of brown sugar
– 1/2 teaspoon of ground black pepper
– 2 tablespoons of caramel sauce
– 2 tablespoons of soy sauce
– 3 tablespoons of fish sauce
– 1 tablespoon of canola oil (most other neutral oils will be fine)
– 1 stalk of lemongrass finely diced
Heat oil in saucepan, add garlic and shallots, stir until fragrant, add other ingredients and keep stirring until heated through. Blend with a stick mixer or blender until sauce becomes a smooth, runny consistency.
