RECIPE for VEGAN MEXICAN PIZZA “TLAYUDAS”:

1. CRUNCHY TORTILLA
Ingredients:
Flour or corn tortillas (store-bought)
Olive oil

Instructions:
Heat olive oil over medium-high heat and roast tortilla until colored on both sides.

2. REFRIED BEANS
Ingredients:
400g pinto beans (cooked and rinsed)
1 small onion
2 cloves garlic
1 tsp paprika
1 tsp smoked paprika
1 tsp cumin
juice of 1 lime
1 cup of cilantro leaves, loosely packed
olive oil
salt and pepper
1/2 cup water

Instructions:
Heat olive oil over medium-high heat. Add onion, immediately add salt and sauté until translucent. Add garlic and spices and roast for another minute. Add pinto beans, water and let them cook for 10-15 minutes until they are very soft. Mash the beans with a potato masher and finish off with lime juice and cilantro leaves.

3. WALNUT CHORIZO:
Ingredients:
2 cups walnuts
1 cup kidney beans
1 shallot, diced
1 jalapeño, roughly chopped
1 clove garlic, roughly chopped
1 tablespoon tomato paste
1 teaspoon paprika powder
1 teaspoon smoked paprika
1 teaspoon cumin
salt, pepper
olive oil

Instructions:
First process the walnuts in a food processor. Still leave a chunky texture. Add beans, shallot, jalapeño, garlic, tomato paste and a bit of olive oil. Keep processing until everything has mixed, but you still want to keep a chunky texture. Heat olive oil over medium-high heat and add your walnut mixture. Add your spices and roast for about 3-5 minutes.

4. MEXICAN RED CABBAGE SLAW
Ingredients:
2 cups red cabbage, finely diced (I used a mandoline slicer)
1 red onion, thinly sliced
1 bunch cilantro leaves
5 radishes, thinly sliced
juice of 1 lime
salt, pepper
olive oil

Instructions:
Add all ingredients to a bowl and dress with lime juice, olive oil, salt and pepper.

5. GARNISH:
Cherry Tomatoes, Edible Flowers, Avocado Rose
