I wanted to share my Sweet Potato Stew recipe with you guys since many of you are always asking for healthy cozy meal ideas. This recipe is very inexpensive and full of nutrition packed ingredients. I made this stew in only 12 minutes in the pressure cooker as well so that’s another plus. I’m all about the quick & healthy meal ideas! I also show you guys how I make my super easy Vegan Eggnog Latte in this weeks video. You will only very few ingredients and it will taste better than the coffee shop versions!

EGGNOG LATTE
– 2 cups vegan eggnog
– 3/4 cup fresh brewed coffee
– 1 Tbsp. pure maple syrup
– nutmeg
Add the Eggnog, Coffee, Maple Syrup and a pinch of nutmeg to a small pot over medium heat. Heat some extra eggnog or other non dairy milk in a frother. Once it’s heated up transfer to a mug and add the non dairy foam on top. Sprinkle some nutmeg on top.

VEGANMOMMYDEE’S EASY SWEET POTATO STEW
– 2 large sweet potatoes, peel & chop them up
– 1 cup diced potatoes
– 2 can of black beans
– 2 cups frozen mixed veggies
– 1 jar of strained tomato puree
– 1 cup water
– seasonings: paprika, chili powder, oregano and garlic
1. Saute garlic with oregano and chili flakes with water inside the instant pot.
2. Add the sweet potato, diced white potato, tomato puree,beans, water and seasonings of choice.
3. Cook on the Chili/Stew setting in the Instant Pot for 12 minutes.
4. Allow to release and then add in the 2 cups of mixed veggies.
