In this video I share a super easy vegan sloppy joes recipe. I’ve also heard of sloppy joes by another name so this is also kind of a vegan manwich recipe as well. Whatever you call it, it’s an easy lentil sandwich and and easy dinner idea!
So for these vegan sloppy goes with lentils you can use any chopped veggies you prefer. My best suggestion when preparing which veggies to use in your lentil manwich recipe is to make sure to chop them all roughly the same size as the canned lentils.
How to make vegan sloppy joes:
– Drain and rinse well one can of brown lentils.
– Chop onions, peppers, carrots etc. the same size of the lentils.
– Add half a can of corn
Now, to make the sauce for these lentil sloppy joes:
– 1 cup plain tomato sauce
– 1 – 2 tbsp ketchup
– 1 – 2 tsp of yellow mustard
– 1.5 tbsp of tamari or soy sauce (tamari is better!)
– 1/2 tsp black pepper (more or less to your preference)
– 1 tsp chilli powder
– 1 tsp smoked paprika
– 1 – 2 tsp corn starch (if you want a thicker sauce)
Sautee all veggies except the lentils in a pan. I did mine with no oil. Once the onions and carrots are soft, add the lentils and sauce and cook until thickened. Serve on a bun, toast or bagel or on top of some rice!
