Vegan Bean Chili Recipe 🌶

It’s Sunday and I have another #SundayRecipeTime for you. We’re keeping it short and cute with a one pot Bean Chili recipe! It’s vegan friendly too.

Ingredients
1 can (28 oz.) of Whole Peeled Tomatoes
1 can (15 oz.) Black Beans
1 can (15 oz.) Dark Red Kidney Beans
1 can (15 oz.) of Sweet Whole Kernel Corn
1 can (15 oz.) of Tomato Sauce
1 cup of Vegetable Broth
1 small Sweet Onion (diced)
1/2 Red Bell Pepper (diced)
1/2 Yellow Bell Pepper (diced)
4 cloves of Garlic (minced)
2 tbsp of Onion Powder
1 tbsp of Garlic Powder
1 tbsp of Red Pepper Flakes
1 tsp of Chili Powder
1 tsp of Cumin
1 tsp of Dark Brown Sugar
1 tsp of Ground Black Pepper
1 tsp of Smoked Paprika
1 tsp of Salt
Extra Virgin Olive oil to sauté

Directions
1. Prep all of your veggies and drain your beans and corn. Rinse beans and corn to get excess salt off.
2. In a pot, turn to medium heat and add in your olive oil.
3. Once oil is heated, add your garlic and simmer for 30 seconds.
4. Then add in your bell peppers and onions. Cover and allow to sweat for 5 minutes.
5. Add in all of your other ingredients, stir well and cover. Make sure to vent the lid a little to avoid bubble over and simmer on low for an hour.
6. Add your own toppings and you have some dope chili!
