✦ In this episode, we will be reviewing De La Vera Smoke Paprika flavor chips from Torres. I got these from a local supermarket ✦

⮕ The finest paprika powder in Spain is made close to the original monastery garden in the fertile soils in La Vera where the microclimate is mild with plentiful rain. It is only a distant cousin to the Hungarian paprika that is used for Eastern European dishes. In the fall little pimento peppers are harvested and are placed in drying houses where they are smoke-dried with oakwood giving this paprika its aroma and particularly smoky flavor. The farmer has to go into the smoking house every day for two weeks to turn over the layer of peppers by hand and then milled by electrically powered stone wheels. The deep smoky red powder is indispensable for many types of Spanish cuisine preparations such as paellas and lomo pork loin. The spice has crossed into regular American cuisine as a seasoning for deviled eggs, barbecue pork, and kebabs.
