EGGPLANT PLUM SALAD / 375 kcal / lunch

INGREDIENTS
Olive oil 2 tbsp
Eggplant 1
Salt
Black pepper
Red / yellow / green bell peppers 3
Black pepper
Chicken breast 200 g
Plum 50 g
Sesame seeds

PREPARATION
Fry the cut eggplant, season with the salt and black pepper.
Fry the colorful bell peppers, season with the black pepper.
Place the shredded chicken in a large bowl, add the eggplant, peppers and plums, mix.
Sprinkle the sesame seeds and serve with garlic sauce.

EASY CHICKEN SALAD / 220 kcal / lunch

INGREDIENTS
Basil ½ bunch
Mozzarella balls 10
Pitted olives 70 g
Cherry tomatoes 5
Chicken breast 200 g
Salt
Black pepper
Olive oil 2 tbsp

PREPARATION
Place the basil in a large bowl, add the mozzarella balls, olives, shredded chicken and cut
cherry tomatoes.
Season with the salt and black pepper, stir in the olive oil.
Pour some vinegar on top and enjoy!

BEEF AND POTATO CASSEROLE / 380 kcal / dinner

INGREDIENTS
Olive oil 2 tbsp
Onion 1
Carrot 1
Salt
Black pepper
Ground beef 300 g
Green peas 100 g
Tomato paste 40 g
Wheat flour 70 g
Potatoes 3
Butter 30 g
Salt
Paprika
Milk 50 ml
Cheddar 100 g

BAKE
180°C / 360°F
20 minutes

PREPARATION
Fry together the onion and carrot, season with the salt and black pepper.
Add the ground beef and fry until brown.
Add the green peas, tomato paste and mix.
Stir in the wheat flour.
Meanwhile, mash the potatoes and add the butter for extra flavour.
Season with the salt, paprika, pour the milk, add the cheddar and stir.
Spread the beef mix in the baking pan and add the layer of potato mix.
Place in the oven for 20 minutes at 180°C / 360°F.

CHICKEN AND MUSHROOM IN WINE / 510 kcal / dinner

INGREDIENTS
Wheat flour 150 g
Parmesan 100 g
Salt
Black pepper
Chicken breast 400 g
Butter 30 g
Olive oil 2 tbsp
Garlic 2 cloves
Mushroom 200 g
Salt
Black pepper
Chicken stock 100 ml
Red dry wine 100 ml
Cream 70 ml
Parsley

PREPARATION
Mix the wheat flour, shredded parmesan, salt and black pepper.
Dip the chicken breasts in the mix, fry in butter and olive oil.
Fry the garlic, add the cut mushroom.
Season with the salt and black pepper.
Pour the chicken stock, red dry wine.
Place the chicken breasts in the mix and add the cream, simmer.
Serve with parsley on top and enjoy!
