Combination of tomatoes and eggs make the dish extradelicious.
Tomato Eggs is a quick and easy recipe you can do with easily available ingredients at home.
For this recipe all you need is,
Eggs – 3
Paprika – 3
Oil – 3 tbspn
Salt – to taste
Butter – 75 grams
Chilli powder – 2 tbsp
Tomatoes – 2 (Big sized)
Feta cheese – 50 grams
Green chilli – as required
Shallots – 3 to 4 (Finely chopped)
Garlic – 2 to 3 (Finely chopped)
Grated mozzarella(Optional)
Spring onions(Garnishing)
Steps to do:
Step 1: Heat the pan and apply oil and butter on it.
Step 2: Once the butter melts, add finely chopped garlic and saute it well
Step 3: Add finely chopped spring onions to the garlic
Step 4: Once the raw smell of garlic and onion gets out, add paprika
Step 5: Add little bit of salt and Chilli powder. Stir it continuously
Step 6: Add grated tomato into it and cook it by covering the lid for about 15 to 20 minutes in medium flame
Step 7: Once the tomato gets cooked, scramble feta cheese on top of it and gently give a stir.
Step 8: Open three eggs on to the boiling tomato. Also, add the remaining butter on it so that the eggs cooks softly. Close the pan with the lid for about 30 seconds.
Step 9: Remove the lid and stir the egg. Allow it to cook for few seconds
Step 10: Add few grated mozzarella on top and garnish it with spring onions.
Enjoy this tomato eggs with roti, naan or chappathi.
