During the month of October, I decided to try Vegan meals. These Tofu Breakfast tacos were really simple and they were literally DELICIOUS!!! Sorry that the audio was not entirely synced with my voice throughout the video… Not sure what happened there… But here is how I created the meal:
Tofu Breakfast Tacos:
Firm Tofu
Bell Peppers (yellow, orange and red)
Yellow onions
Spinach
Daiya Vegan Cheddar Cheese
Avocado
Paprika (optional)
Seasonings:
Garlic powder
Pepper
Smoked Tumeric
Ghee Spray (Grapeseed and Coconut included)
Sautee the veggies and seasoning in the Ghee spray prior to adding the tofu. Once veggies are slightly soft, add the tofu. I seasoned the veggies and the tofu separately. Mix them all together in the skillet.
Spray the second skillet and put the corn tortilla in… swirl it around and flip it immediately… let it sit for a minute or so… add the vegan cheese and allow it to remain in the skillet until the bottom is golden brown and slightly crunchy. If the cheese doesn’t melt, put it in the microwave for about 10 seconds…
Spoon the tofu mix onto the shell… Cut the avocado in slices and place on top of the tacos. Sprinkle a little garlic powder and pepper on the top of the taco. I sprinkled paprika on top if you want…
