How to Make a Much tastier chicken burger than you’d find a McDonald’s!
This Recipe is very simple and easy to follow. If you dont want to make your own Burger Buns this is also a very quick recipe to follow and is Delicious, easily showing you how much better you can make a chicken burger than you’d find at McDonalds.

Burger buns

Bread Flour – Up to 450g
Warm Water – 240ml
Olive Oil – 4 Tablespoons
Sugar – 1 Tablespoon
Yeast – 1 Tablespoon
Salt – 1.5 Teaspoon

1 Egg for Egg wash (1 Whole Egg and a splash of water)

Pickled Onions
1 Red Onion
Water – 200m
A form of vinegar (White wine, Rice etc) – 200mls
Chilli flakes – a pinch
Salt – a pinch
Sugar – 1 Tablespoon
Black Peppercorns – a couple

Fried Chicken

Chicken Thighs
Milk – Enough to cover the amount of Chicken your using
Flour – Enough to coat the amount of chicken your using
Lemon juice – 1.5-2 tbs

Spice Mix – 1.5 -2 Teaspoon of each (Amend to your preference, This amount was good for 6 thighs)

Smoked Paprika
Cayenne Pepper
Black Pepper
Ground Ginger
Garlic Powder
Onion Powder
Mixed Herbs
Turmeric
Cumin
Salt

Pickled Onions

– Mix equal parts water and vinegar in a pan. Add a Tbsp of Sugar, a couple of black peppercorns, a pinch of salt and a pinch of chilli flakes.
– Place on a hob, heat and stir until sugar is completely dissolved.
– Finely slice 1 red onion. Place into a container and pour over the hot liquid cover and once cooled to room temp place in the fridge until ready to use.

Burger Bun

– Add Water, Yeast and Sugar into a large mixing bowl and wait a couple minutes to see if yeast is activated.
– Add the salt and olive and mix.
– Add half the flour and mix until thick fully combined This helps mix the oil in).
– Slowly add the other half of flour, mixing with your hands until a rough ball is formed. Then knead for around 8 minutes until a smooth ball has been formed.
– Place in an oiled bowl and cover with a damp tea towel and let rise for around an hour.
– Divide into 6 equal balls and place onto oiled baking paper. Using the friction of your hands to create a perfect bun shape. Cover with a damp tea towel and rise again for another hour.
– Once risen brush with egg wash, sprinkle with sesame seeds and place in a preheated 180c or 350f oven for 12-18 minutes.
– Cool for at least 20 minutes.

Fried Chicken

– Placing, 1.5-2 teaspoons of smoked paprika, ground ginger, garlic powder, onion powder, cayenne pepper, mixed herbs or oregano, Turmeric, cumin, black pepper and salt. If you don’t have any of these ingredients feel free to replace with your preferred spices.
– Next we make our brine you may see many us based recipe calling for buttermilk which i find to be very uncommon in uk supermarkets but to replicate this we going to add milk to a mixing bowl and adding around 1.5-2 tablespoons of lemon juice as butter milk is more acidic than regular milk. We then add roughly a tablespoon of our spice mix and mix the mixture before adding our boneless skinless chicken thigh and let it marinate for at least 1 hour or you could be left overnight in the fridge.
– Once marinaded we place some flour in a tray and add the remaining spice mix whisking until it’s all incorporated. Then, place our chicken thighs in the flour mixture pressing into every crevice to ensure it is fully coated before shaking and placing on a wire rack using only one hand for the flavour and one hand for the wet bowl.
– We then place the chicken into heated oil carefully. Ensuring you only fill your pot a couple of inches high as if you put too much oil in it can result in burns or a fire hazard also making sure you’re using a suitable sized pot for frying. We used large tongs as this makes it safer.
– Let fry for around 6-8 minutes until golden brown and crispy. Using a slotted spoon to carefully remove and placing on a different wire rack the before and sprinkling with salt while still hot. Using a wire rack instead of kitchen roll keeps the chicken crispier.
Now assembling your burger with a toasted burger bun, your sauce of choice, your freshly fried chicken, some shredded lettuce and our homemade pickled onions.
