Livers are loaded with iron to give you energy and a treasure trove of certain B vitamins, most notably B12. This nutritional profile makes them a good choice for anyone prone to anemia. Chicken livers are also one of the top sources of vitamin A, which helps eye health.
Chicken Liver Recipe:
Ingredients
2.5 lbs chicken livers
6 garlic cloves
2 tsp salt, divided
1 tsp oregano
2 tsp paprika
Freshly ground black pepper to taste
2 cups all-purpose flour
Vegetable oil for frying
Directions:
In a mortar “Pilon” add the garlic, 1 tsp salt, and oregano. Mash until it turns into a paste.
Season the chicken livers with the garlic paste and about 1 tsp of black pepper.
Keep in the fridge and marinate for at least 1 hour.
Add the flour into a mixing bowl with the paprika, 1 tsp salt, and black pepper to taste.
Heat oil in a large skillet to 375 degrees F.
Dredge the chicken livers in the seasoned flour (in batches).
Gently place the coated livers, a few at a time, into the hot oil. Deep fry the livers until crisp and golden brown, 6 to 8 minutes.
