I’m super excited to share my fav bean recipe with you. I make this all the time and it goes so well in so many dishes. It only takes 10 mins to make and is full of awesome and nutritious ingredients.
Written Recipe:
Serves 4 (or 2 hungry boys)
2 red onions
3 cloves garlic
2 tins of black beans/kidney/any beans
1 tin canned tomatos
1 tbsp miso paste
1 tbsp apple cider vinegar
Spice Mix
1 tsp cumin
1 tsp ground coriander
1/4 tsp cinnamon
1 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1/4 tsp chilli (if desired)
Dice half onion, slice half onion to get nice texture. Sauté in pan for about 5 mins until brown.
When browned add garlic and spices and sauté for 2 more minutes to bring out the flavour of the spices.
Add tomatoes and cook down for 2 more mins until mixed through
Add drained and rinsed beans and mix thoroughly throughout the sauce
Take off the heat and add miso and apple cider vinegar paste and mix through.
Mash beans with potato masher to bring out the flavour and mix the awesome sauce throughout everything.
Season to taste with salt + pepper + lemon juice.
Serve however you love your beans! We made nachos in this video but they’re amazing in burritos, enchiladas, tacos – they’re even great on toast 🙂
