Ingredients:
-1 Yellow Onion
-2 Ribs Celery
-2 Carrots
-2 Gala Apples
-1 Jalapeno
-1 tbsp Ginger Root
-4 tbsps Butter
-4 Garlic Cloves
-28 oz Diced Tomatoes
-1.5 tbsp Curry Powder
-2 tsp Cumin
-1 tsp Paprika
-0.5 tsp Cinnamon
-1 tsp Turmeric
-0.5 tsp Cardamon
-Black Pepper to Taste
-1 tsp Dried Thyme
-0.5 Cup Lentils
-3.5 Cups Chicken Broth
Recipe:
1. Melt butter in a pot, add onion, carrots, jalapeño and cook until onions are soft.
2. Add garlic, ginger, apples and tomatoes.
3. Coat with spices.
4. Add lentils and chicken broth.
5. Simmer for 30 min on low heat.
6. Use an immersion blender to puree about 1/2 the mixture.
