I like to make Hummus from Dried Chickpeas rather than the canned Chickpeas. Instant Pot is perfect for cooking Dried Legumes like Chickpeas. You can use a regular pressure cooker to make Hummus. This recipe is Vegan, Healthy, and the best hummus recipe.

Ingredients:
Cooked Garbanzo Beans aka Chick Peas- 30 oz (app. 3 Cups)
Aquafaba (chickpea water) / Water- 1/3 to ½ Cup
Tahini- ½ Cup
Olive Oil- ¼ Cup
Garlic- 2 Cloves
Cumin- 1 Tsp
Salt- ½ Tsp or to taste
Lemon Juice- 2 Tbsp
Instructions:
· Cook the dried garbanzo beans in the instant pot for 35 minutes.
· Drain the cooked beans and save the chickpea water called Aquafaba.
· In a high-speed blender or food processor add all the ingredients.
· First, blend them over the lowest speed, then increase the speed slowly to high. Blend until desired smoothness.
· In an ace plus blender, I just selected the smoothie option.
· Garnish hummus with finely chopped parsley, a pinch of salt, and paprika. Drizzle with extra virgin olive oil, then serve. Enjoy!
