For Mother’s Day, the next stop of our gastronomic tour led to Lake Tisza, where Tamás made a classic Hortobágy-styled stuffed pancake in Europe’s largest freshwater aquarium. 💐👩‍👧

“HORTOBAGY”-STYLED STUFFED PANCAKES

Ingredients:
• chicken drumstick
• onions
• tomato
• garlic
• bell pepper
• yellow pepper
• salt
• black pepper
• ground sweet paprika powder
• marjoram
• sour cream
• vegetable oil

For the pancakes:
• flour
• egg
• milk
• water
• salt
• vegetable oil

First, we prepare the base of the chicken paprikash. Dice up the onions, the tomatoes, the garlic and both types of peppers. Braise the onions in a pot with some vegetable oil and add every other ingredient after a few minutes.
Season it with sweet paprika powder, salt, pepper, and marjoram as well. Add some broth or water to the base and boil it for 15 minutes. Now you can add the chicken. You can add more water if necessary. Let it cook for about an hour.
Now come the pancakes. We make the pancake batter without the sugar because the outcome is going to be savoury this time. Let it rest for 10 minutes before baking them.
When the chicken is ready, get the thighs out and remove the meat from the bones. Keep some of the skin to chop them finely together with the chicken.
Puree the stew with a mixer and add some sour cream. If it is not thick enough, add some extra flour as well.
Fill the baked pancakes and serve them.
