Here is the recipe for our Sweet Potato Burger (Mexican Style)
So, what we wanted to do is to create a sweet potato burger patty with a lot of flavor and texture. To avoid a soggy patty, we opted for baking the sweet potatoes instead of cooking them. I also think a baked sweet potato tastes always better. We also added cooked quinoa for the texture and some breadcrumbs to bind everything together. Using breadcrumbs instead of flour helps the texture a lot by preventing a pancake-like consistency and also gives the patty more flavor. We then added some red pepper pieces, sweetcorn and kidney beans to the mixture. We seasoned everything with salt, smoked paprika, cinnamon and chili powder, which gave the patty a Mexican style.
