Tuna-like texture, flavor and versatility all from a plant-based substitute – jackfruit.
The recipe-
Ingredients:
1-14 ounce can of young jackfruit drained and rinsed thoroughly
1stalk of celery finely chopped
1 small red onion chopped
1 heaping tablespoon fresh chopped parsley leaves
3 tablespoons Dijon mustard
1/3 cup vegan Mayo
1/2 teaspoon paprika ground
1 tbsp lemon juice
Sea salt and pepper to taste Instructions:
Drain and rinse the Jackfruit and pulse in a food processor until it’s shredded and resembles canned tuna. If you don’t have a food processor, you could chop with a knife and fork.
Next add the celery, onion, parsley, mustard, mayo, paprika, salt and pepper and pulse just till combined. Serve as is or as a sandwich (Try my pita bread recipe to serve this as a sandwich- https://youtu.be/RM-NFfum790) You can also try adding one half of a small green apple chopped (About a half a cup to change flavor and texture).
