Stuffed Zucchini

I admit i sometimes indulgent myself with cold leftovers using a spoon while standing in the kitchen, sometimes eating it right out of the fridge.
Ingredients:
***For the stuffed zucchini***
Large zucchini – 5 (hollowed out)
Minced zucchini flesh (you will only need the mince from about 2 hollowed out zucchini)
Onion – 1/2 (Chopped)
Jalapeno – 1 (Chopped)
Minced turkey – 1 Pound
Paprika – Dash
Salt – Dash
Chicken stock – Dash
***For the Sauce***
Onion – 1/2 Chopped
Tomato sauce – 1 Can
Tomato puree – 1 Tbs
Water – 1 Cup
Paprika – Dash
Salt – Dash
Chicken stock – Dash
**Preparation time: 15 minutes
**Cooking time: 45 minutes
**Total time: 1 hour
Instructions:
1. Prepare stuffing – After adding the turkey meat to the fried onions, Jalapeno and minced zucchini flesh continue cooking until turkey meat is about 80% cooked through (about 10 minutes depending on heat)
2. Fill zucchini with stuffing
3. Prepare sauce
3. Combine save and stuffed zucchini and cook until zucchini is tender – approx 45 min – 1 hour
4. move to serving dish (be careful because the zucchini is soft and will break apart if not handled gently)
