Ingredients:
4 bell peppers carved and deseeded
2 tsp Extra Virgin Olive Oil (EVOO)
1 lb minced beef (or chicken)
1 c cooked rice
1 can chunky tomatoes
1/2 c chopped onion
1 head garlic minced
1 1/2 c shredded mozzarella
1 tsp Italian seasoning
1 tsp parsley flakes (or fresh parsley)
1 tsp paprika
1 tsp oregano
1 tsp Chilli flakes
salt and pepper to taste
(we added 2 tsp balsamic vinegar and 2 tbsp local green seasoning not shown in the video)
Method:
Place carved peppers in baking dish. Add 1 1/2 c water into dish. Foil entire dish and bake for 25 mins at 350°
While baking, cook meat in large skillet by heating oil and adding meat, salt and pepper and cook for 8 mins.
Add onions and garlic and cook for an additional 6 mins.
Add rice, mozzarella, tomatoes and seasoning and mix for 30 sec.
Stuff peppers with mixture and place in baking dish. Bake for an additional 20 mins.
