I wanted to share a fun, and extremely tasty variation on traditional popcorn. Cayenne Pepper and Smoked Paprika provide a bit of heat, bacon adds a smoky flavor and crunchy texture and the dehydrated lime helps to balance all the flavors with a slight tang!

A SPECIAL THANKS TO MY GREAT FRIEND AND FELLOW CULINARY ENTHUSIAST, KEVIN “BASSMAN” SAMP FOR PROVIDING THE INSPIRATION FOR THIS RECIPE! THANKS KEVIN!

FULL RECIPE

1 cup corn kernels
1 cup bacon, diced
1 tbsp. smoked paprika
1 tbsp. dried lime peel
2 tsp. garlic powder
1.5 tsp cayenne pepper(optional)
6 tbsp. salted butter
1 tbsp. honey

Method:
1. Crisp bacon in sauté pan and reserve fat
2. In a large pot, add reserve bacon fat and add corn kernels. If needed, add some additional oil. Cover with lid and cook until there is a 2-3 sec. delay in between each pop. Remove from heat.
3. In a small pot, add butter, spices and honey. Heat until butter is melted, and all spices are fully incorporated.
4. Place popcorn is bowl large enough to hold full amount.
5. Pour butter mix over popcorn, add in the crispy bacon and toss until fully coated.
6. Season with salt, to taste.
7. ENJOY!!
