One of my new healthy recipes.
Recipe:
My spice blend recipe:
2 tbsp paprika
1 tbsp red pepper flakes
1/2 tbsp cumin
1 tsp ginger powder
1 tbsp garlic powder
1 tbsp onion powder
1 tsp pink salt
1 fresh ground black pepper
This blend is very mild – for a kick of heat add 1/2 to 1 tsp. cayenne pepper
Directions:
Add 2 tbsp Virgin Coconut oil to a large frying pan (Med. heat)
Add 1/4 cup finely diced red onion
Sautee for 2-3 mins.
Add 4-5 fresh garlic cloves (minced / crushed)
Sautee for 1 min.
Add 15-20 lrg. raw shrimp (shelled & deveined)
Sautee for 2 mins.
Add ALL Spice Blend (recipe above)
Increase heat to Med / High
Add 1 cup diced tomato
Fry until tomato is cooked down and most of the liquid is gone
Add 1/2 can Coconut Milk or Coconut Cream … or 1/2 to 3/4 cup heavy cream or plain greek yogurt
Combine well, bring to a boil and reduce to a simmer until some of the liquid cooks down and you have a creamy sauce.
Add 3 tbsp. of chopped fresh flat leaf parsley or cilantro
Add juice of 1/2 Lime to shrimp mixutre
Slice your desired amount of Avocados in 1/2. Slice a very tiny piece of skin off the back of each avocado slice so that they sit flat on a plate.
Add a drizzle of fresh Lime juice to the inner flesh of the Avocados
Place two halves on a plate and scoop the shrimp mixture into each 1/2. Sprinkle with more fresh parsley and garnish with a pickled jalapeno slice.
