Spicy Mushroom & Lentil Tray w/ Sweet Paprika from the "Cannabis as Medicine" Podcast w/ Attam Singh

Ingredients:
1 tbsp extra virgin olive oil
1 can Chopped tomatoes
1 can/pack of lentils, drained and rinsed
½ tsp cayenne pepper
2 tsp sweet paprika
Bay leaf
350g mixed mushrooms, torn
1 small red onion, sliced
10g Dill, chopped

Marinade Ingredients:
1 tsp miso
½ lime juice
1 tsp chilli flakes
2 tbsp soy or tamari sauce
1 tbsp sesame oil

Method:
1. Preheat the oven to 200C
2. Add the lentils, chopped tomatoes, olive oil, seasoning, spices and bay to a roasting tin or oven proof dish and add to the oven for 25-30mins
3. Add the mushrooms and red onion to another roasting pan and bake for 10minutes
4. Meanwhile prepare the marinade ingredients by mixing in a bowl
5. Add to the mushroom tray after 10minutes and roast for another 15minutes until cooked and slightly crispy
6. Bring the dish together by putting the mushrooms on the lentils and scatter with dill
