The Spicy Fried Shrimp Po’ Boy!
You’re going to want to have a pound or two of raw shrimp, shelled.
A few hoagie rolls and a bottle of hot sauce.
Brine:
1 cup buttermilk
2 tsp hot sauce
1 tsp ground chipotle
2 tsp cayenne pepper
1 tsp fresh ground pepper
2 tsp kosher salt
Breading:
1 cup flour
½ cup cornmeal
2 tsp paprika
2 tsp kosher salt
Roumelade:
1 ¼ cup mayo (1 egg, 1 tbsp yellow mustard, 1 tbsp white wine vinegar, ¼ tsp kosher salt, 1 cup avocado oil, 1 tsp fresh lemon juice)
¼ cup mustard (creole or brown)
1 tbsp paprika
1-2 teaspoons cajun seasoning
1 teaspoon pickle juice
1 teaspoon hot sauce
1 large garlic clove, smashed then minced
Toppings:
Fresh tomatoes
Shredded lettuce
Pickles!
