Hi everyone, welcome back to my channel. This simple spicy chicken pasta recipe is perfect for a midweek meal, it can be on the table within twenty minutes and uses ingredients you probably already have in the house!
Ingredients
Chicken breast
1 tin of chopped/plum tomatoes
8 cloves of garlic, chopped
Half a chilli/chilli flakes
1 bag of baby spinach
1 tablespoon of tomato puree
1 and a half teaspoons of smoked paprika
1 and a half teaspoons of dried basil
Penne pasta (or pasta of your choice)
Parmesan
Olive oil
Garlic salt/salt
Pepper
Method
1) Season the chicken breast with salt and pepper, whilst heating a couple of tablespoons of olive oil in a pan
2) Throw your garlic in a pan, fry until lightly golden then add your chicken and cook through
3) Remove the chicken once cooked though, add a the tomato puree and cook off for a minute or so
4) Add in your chilli, paprika and basil, cook off for a minute or so. Add the can of tomatoes, stir into what is already into the pan. If you are using plum tomatoes, break them down with your spoon
5) Simmer the sauce on a medium heat for roughly 10 minutes. Start cooking your pasta. Taste the sauce, season to your taste with garlic salt/salt and pepper.
6) Re-add the cooked chicken and let simmer with the sauce for roughly 5 minutes
7) Add the spinach. Once it has reduced down, add your penne and mix together. Add some parmesan straight into the pan and mix. Check for seasoning.
8) Dish, top with parmesan and enjoy!
