Spicy Beans and Tomato
1 x can chopped tomatoes
2 x beans of your choice ( used here pinto and cannellin)
1 x large onion thinly sliced
2 x tsp chopped garlic
2 x tsp Harrisa paste
Chopped flat leaf parsley and coriander (cilantro)
1 bowl spinach leaves
Salt, pepper and smoked paprika
1️⃣ In a warm pan add some olive oil #EVOO and when the oil is warm enough add the chopped garlic. Sauté for a min just so flavour infuses into the oil
2️⃣ Add the onions and cool until the onions are transparent, cook longer if you prefer it caramelised
3️⃣ Add the salt, pepper and smoked paprika and sauté for a few minutes
4️⃣ Add the canned tomatoes and harrisa paste and simmer on a low medium heat until the sauce has thickened slightly
5️⃣ Drain the beans from the can and add it to the sauce and add the chopped parsley and coriander (cilantro)
Tip: If the sauce is too thick you can rinse the tin of chopped tomato with a little water and add it to the sauce.
6️⃣ Finally add the spinach at the end and it will wilt with the heat.
Serve with couscous and minted cucumber riata. ENJOY!!
