Ingredients
Turkey 🦃 12 lbs
Marinade :
Yogurt 2 cups
Salt 1 tbs
Turmeric 1 tsp
Coriander powder 4 tsp
Red chilli powder 1tsp
Garlic powder 2tsp
Paprika 1 tsp
Oregano 1 tsp
Parsley 2 tsp
Ginger garlic paste 4 tbsp
Soy sauce 1/4 cup
Dark soy sauce 1/2 tsp
Lemon juice 4 tbsp
For garlic butter
Butter 1/2 cup
Fresh parsley 3/4 cup (chopped)
Black pepper powder 1 tsp
Salt 1 tsp ( or to taste)
Minced garlic 2tsp
Green chillies 10-12
Rice ingredients:
Long grain Basmati Rice 4 cups ( soaked in water for 1 hour)
Oil 1 cup
Fried onions 1 cup
Ginger garlic paste 2 tbsp
Salt 2 1/2 tsp ( or to taste)
Boiling water 7 cups
Green chillies 3 (split into half)
Orange food color (optional)
Method :
Prepare the turkey by rubbing a mixture of olive oil and dried parsley all over it. Mix all the marinade ingredients together and pour all over the turkey. Rubbing on all parts thoroughly. Leave it overnight for best results!
Next day, mix the garlic butter ingredients together and insert it under the skin. Cover tightly with a foil sheet and put it in preheated oven at 400°F for one hour and then at 350°F for another hour.
For the rice :
Heat oil in a deep pan. Add fried onions, ginger garlic paste and salt. Mix well. Add water and cook on medium high heat until rice is half cooked. Reduce the heat to low and cover the pan until rice are cooked completely.
Take out your cooked turkey from the oven and baste with its soup. Then reduce the soup separately in pan.
To serve:
Take out the rice in large dish. Put the turkey on top. Pour the yummy thick soup over! Garnish with baked potatoes and boiled eggs.
