Spanish chicken rice
Ingredients:
3 cup rice, washed & soaked
Chicken 750g
Vegetable oil 1/2 cup
2 tbsp butter
1 large red bell pepper, cored, chopped
2 large red onion, peeled, chopped
5-6 garlic cloves, peeled, crushed
1 small tomato, chopped
1/2 cup tomato paste
Green chillies 4-5 small, chopped
2 cups chicken broth , 2.5 cups water
1 tsp smoked paprika
1 tsp garlic powder
1 tsp salt for chicken, 3.5 tsp for rice
1 tsp black pepper for chicken, 1 tsp for rice
1/2 tsp cayenne pepper
Spring onions 1/2 cup
Recipe:
Soak The rice for 30-40 minutes in water, and drain.
In a bowl, season the chicken with paprika, garlic powder, cayenne pepper, salt, and black pepper.
In a deep skillet with a cover, heat butter. Add the chicken, and brown deeply on both sides over high heat. Remove the chicken and set aside.
In the same pan, add the onions and fry till translucent. Then add garlic and sauté for a while. Then add red pepper and fry. Then add tomato paste, and fry well. Also, add black pepper and salt.
Add chicken broth and water (Just enough to fully cook your rice). Bring it to boil and then add the rice to it. Cover to cook on high flame till 80% water dries up.
Add the browned chicken back to the pan. And let simmer till the water dries up.
Now add the chopped tomatoes.
Turn the heat off, sprinkle some chopped spring onion and leave the pan covered and undisturbed for 10 more minutes.
Use spring onions and green chili or coriander for garnishing.
