Arroz con pollo! Delicious Spanish chicken and rice. One of the best comfort food from Spain. Spicy chorizo sausage, flame-grilled chicken, flavorful spices and short-grain rice makes this dish one of the best one-pot meals.
Recipe
∙ 2 Whole chickens
∙ 300 grams fresh spicy chorizo
Spanish Spice Rub
∙ salt & pepper to taste
∙ canola oil or olive oil to coat the chickens
∙ 1 tablespoon garlic powder
∙ 1 teaspoon chilli flakes
∙ 1½ tablespoon paprika
∙ ½ tablespoon smoked paprika
∙ 1 red onion
∙ ¼ cup canola oil(ideally good quality olive oil)
∙ 6 small or 3 large bell peppers
∙ 7 garlic cloves
∙ 2 cups short-grain rice
∙ 80 grams green olives(any type of olive you prefer)
∙ 1 tablespoon paprika
∙ 3 bay leaves
∙ 2 tablespoons sugar
∙ 2 sprigs fresh oregano(1 tablespoon dried oregano)
∙ 2 tablespoons dried parsley
∙ 800 grams of canned tomatoes
∙ 1.5 liters chicken stock(3 bouillon cubes)
Simmer on low heat for 40 minutes or until the rice is cooked
