Many families across America are facing financial hardships during the pandemic.
I’m sharing my childhood favorite one pot meal of American Goulash to help families stretch their dollars and feed their households a nutritious meal. Some people call it ‘American Chop Suey’.
My mom always said that a goulash is a meal when you use what you have in your kitchen. There’s no need to make a special run to the store for the ingredients because most families already have the items on hand and it’s also inexpensive to make.

Southern American Goulash
Ingredients
* 1 Tbsp peanut oil
* 1/ 4 medium yellow onion, chopped
* 2 medium carrots,chopped
* 1 lb. lean ground beef
* 2 tsps garlic powder
* 2 cups low-sodium chicken broth
* 1/2 bag frozen peas
* 1/2 bag frozen sweet corn
* 1/2 frozen lima beans
* 4 Tbsp spicy Ketchup
* 1 (15 oz) can stewed tomatoes, diced
* 8 oz tomato basil
* 1 Tbsp Worcestershire sauce
* 1 Tbsp Italian seasoning
* 2 tsp Slap Ya Mama Seasoning
* 2 teaspoons paprika
* 1/4 tsp Salt and pepper,
* 1 box macaroni pasta
* 1/2 cup frozen chopped gumbo seasoning
Directions
Saute veggies: Heat a large pot over medium-high heat. Add onion, bell pepper and carrot and saute 6 minutes. Scoot to one far side.
Brown beef: Add beef in about 5 chunks and let brown on bottom, about 2 – 3 minutes then break up beef and toss with veggies. Cook beef through, tossing occasionally.
Drain fat, saute garlic: Drain off excess fat as needed*. Add garlic and saute 1 minute longer.
Add canned ingredients and seasonings, simmer: Pour in chicken broth, tomato paste, tomato sauce, diced tomatoes, Worcestershire sauce, Italian seasoning and paprika. Season with salt and pepper to taste. Bring mixture to a simmer.
Add pasta and cook to al dente: Add pasta and stir. Reduce to medium-low cover and let simmer, stirring occasionally until pasta is nearly tender, about 10 – 12 minutes. If needed add a little more broth to thin.
