π§π₯ Garlic-Herb Crusted Salmon with Lemon Yogurt Sauce

Ingredients:
For the Salmon:
4 salmon fillets (skin on or off)
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons fresh parsley (or dill/basil), finely chopped
1 tablespoon Dijon mustard
Β½ teaspoon paprika
Zest of 1 lemon
Salt and black pepper to taste
ΒΌ cup breadcrumbs or crushed almonds (for crunch)
For the Lemon Yogurt Sauce:
Β½ cup plain Greek yogurt
Juice of Β½ lemon
1 tablespoon olive oil
1 clove garlic, finely grated or minced
Salt and pepper, to taste
Optional: chopped dill or chives
Instructions:
Preheat Oven:
Heat to 400Β°F (200Β°C). Line a baking sheet with parchment or lightly grease it.
Make the Garlic-Herb Crust:
In a bowl, mix olive oil, garlic, herbs, Dijon, paprika, lemon zest, salt, pepper, and breadcrumbs.
Prepare the Salmon:
Pat fillets dry, place on the baking sheet, and spoon the crust mixture evenly over each. Press gently to help it stick.
Bake:
Bake for 10β12 minutes, or until salmon is cooked through and topping is golden (internal temp ~125Β°F/52Β°C for medium).
Mix the Yogurt Sauce:
While salmon bakes, stir together the yogurt sauce ingredients in a small bowl.
Serve:
Plate salmon with a generous dollop of the lemon yogurt sauce. Great with roasted veggies, quinoa, or a cucumber salad bowl!
Bonus Tip: Want a smoky edge? Use smoked paprika and finish the salmon under the broiler for 1 minute to crisp the crust.
