How to make…UDO NOODLES!!
Ingredients:
200 g all-purpose flour
90 g water
10 g kosher/sea salt
Potato starch or cornstarch for rolling and dusting
Directions
In a large bowl, gradually add salt and water to flour. Mix with hands. When everything is combined, place the ball of dough into a plastic bag and allow to rest for half an hour to relax the gluten.
Place the bag of dough on the ground under a dish cloth and stamp on it with your feet. Repeat this process until the dough is softer “than an ear lobe.” Let the dough rest for another 2 to 3 hours. Dust off a workspace with cornstarch and begin rolling out the dough. Once the dough is 3 mm fold it like an accordion. then cut the noodles 3 mm wide. Cook for 10-12 minutes then serve!
How to make…DORAYAKI!!
Ingredients:
2 large eggs
2/3 cups of sugar
1/2 teaspoons of baking soda 3
tablespoons water (or milk)
1 cup all-purpose flour (sifted) vegetable oil (for frying)
3/4 pound red bean pasta ( or our favorite sub: Nutella!)
Powdered sugar
Directions
Thoroughly mix together eggs and sugar in a large bowl. Dissolve the baking soda in water and then add to the egg mixture. Sift in flour gradually while mixing. Heat up a lightly oiled skillet. Once hot, pour batter to form a disk roughly 3 to 4 inches in diameter. Flip when bubbles form. Remove from skillet when golden brown. Repeat with each pancake until batter is finished. Let cool. Once each pancake is cool, divide then into pairs. On one, scoop a generous amount of red bean paste or Nutella and to form a sandwich. Dust with powdered sugar and then serve!
How to make…HUMMUS!!
Ingredients:
1/2 pound dried chickpeas
1 tablespoon baking soda
7 large garlic cloves, unpeeled
1/2 cup extra – virgin olive oil
1/4 teaspoon ground cumin
1/2 cup tahini, at room temp
1/4 cup plus 1 tablespoon fresh lemon juice
Salt
Paprika, for garnish
Directions
Put chickpeas in a bowl, cover with water, and mix with baking soda. Let them sit in the fridge overnight. The next day, rinse the chickpeas with cold water and place in a pot with 2 inches of fresh water. Simmer on low heat until the chickpeas are tender, around 40 minutes. Drain, reserving about a half a cup of the cooking water. Puree the chickpeas, cooking water, and peeled garlic cloves, and olive oil in a food processor. Once smooth, add in tahini, lemon juice, and cumin. Mix again until well blended and smooth. Garnish with salt, olive oil and paprika and serve with pita bread or fresh veggies.
