Just the name Smoked Pork Side Ribs on the Traeger makes your mouth water and for good reason, they taste just amazing. This simple but so flavourful recipe will guarantee the most incredible and tender pork side ribs you’ve ever tasted.
Picture this, you have company coming over and you have made up your mind to impress them with your culinary skills. The first thing that comes to mind is a tasty, tender fall of the bone pork side rib rack smoked cooked on the Traeger or any pellet grill that you might have. You brined your ribs for 24 hours in a simple brine solution and now you need a great recipe to blow your guests’ taste buds out of this world. Well this is. Look no further you’ve found it. Here is how it goes.
RECIPE FOR SMOKED PORK SIDE RIBS ON THE TRAEGER
INGREDIENTS
BRINE
1/2 CUP Brown sugar
1/2 cup Kosher Salt
1 tbs Worcestershire sauce
8 cups ice cold water
RUB
1/2 cup Brown Sugar
4 tbs Salt
4 tbs black pepper
2 tbs garlic powder
2 tbs onion powder
2 tbs ground mustard
1 tbs celery salt
1/2 tbs chili powder
POTATOES
1-1/2 lbs Blushing Bell Potatoes
SPG (Salt pepper garlic)
Olive oil
DIRECTIONS
Prepare brine by mixing all ingredients real well until salt & sugar is fully dissolved
Add pork side ribs in a brining container and refrigerate for 24 hours.
The following day prepare your rub by adding all ingredients to a small bowl and mix well.
Remove ribs from brine and pat them down with paper towels to dry them
Remove silver skin from the underside using a paper towels once you have lifted a corner with a spoon
Apply rub to entire surface on both sides of each rib rack
Once done put back in refrigerator and hold for 1 hour
Start your pellet grill and set to 225F
Put each rib rack meat side up and smoke for 3 hours
After 3 hours remove from grill and put ribs in a metal pan.
Raise grill temperature to 350F
Spread liquid honey on ribs and add 1/4″ of Apple juice to pan
Cover with foil and return to grill for 1 hour
Prepare your potatoes by adding them to a metal pan and toss them with the olive oil and SPG
Cover potatoes pan with foil
Add them to the grill for 45 minutes along with the ribs.
After 45 minutes to 1 hour remove ribs from grill to sauce them up with your favourite BBQ sauce
Return them to grill for 15 to 20 minutes.
Let them sit for a bit and now you’re ready to eat
