Smoked Creamy Paprika Chicken by Chef Vineet Bhatia
PAPRIKA CHICKEN
2 chicken breast, cut each into 3 thick slices
1/2 teaspoon smoked paprika powder
1/ teaspoon red chilli powder
2 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon onion powder
salt
Oil to pan fry
Mix all the powders in a bowl and dust the chicken slices with the powder.
Heat oil in a heavy-bottomed pan to medium heat and pan-fry the chicken breast till they are cooked,
Transfer the cooked chicken breast to a bowl, reserve the pan to make the sauce.
CREAM SAUCE
1 clove garlic chopped
1 medium-size red onion, chopped
1 cup vegetable stock
3/4 cup cream
salt
In the pan, the chicken was cooked, add a tablespoon of oil and heat to medium heat. Add the chopped garlic, saute for a minute and add the chopped red onion.
Sauce for another minute, just to sweat the onions.
Pour in a cup of vegetable stock, this helps to deglaze the pan. add salt and bring the stock to a boil and cook for a couple of minutes to reduce the stock.
Stir 3/4 cup of cream into the stock, bring the sauce to a boil. Reduce the heat and let the sauce simmer till it thickens.
Lastly, snip in parsley leaves into the sauce.
ASSEMBLY
Place the smoked paprika chicken on the plate and spoon the cream sauce on half of the chicken, garnish with a parsley sprig.
