Kevinโs Cajun chicken skewers with dip
Thereโs something so warming about Cajun spices and chicken that marry so well together, check out this flavoursome simple recipe to enjoy with family or friends
Ingredients:
For the chicken:
1 chicken breast skin off
1 tsp cajun spice blend
1 tsp paprika smoked
1/2 tsp coriander
For the dipping sauce:
200g of fig tree house dressing
100g of Mayo
For the salad:
Some garden salad leaves
1 thinly sliced apple
Thinly cut your chicken length ways and place on the skewer.
Season your sliced chicken pieces with smoked paprika, coriander and Cajun spice, salt and pepper.
Ensure your chicken is coated in the spices
Add oil to a hot griddle pan and place your chicken on it, or cook in your oven at 180 for about 20 min.
Turn your chicken halfway through cooking and season. To plate up place your skewers on the plate and garnish with dipping sauce and salad.
