INGREDIENTS –
GRITS:
4-6 Slices of Bacon
Reserved Bacon Grease (2TBSP)
3 Cups Chicken Stock
1 Cup Quick Grits (do not use “Instant Grits”)
6 Tablespoons Butter (1/2 for Grits – ½ for Shrimp)
2- TBSP Butter (unsalted)
2 Cups – Shredded Cheddar Cheese
Kosher Salt
Freshly Ground or Coarsely Ground Black Pepper
SHRIMP:
1-2 Lbs. of Large Shrimp – Shelled/deveined
4 pieces of Green Onions
½ Medium Yellow Onion (optional)
5-6 Cloves Garlic – minced
Handful Flat Leaf Parsley (@ ¼ – ½ Cup) Chopped
1 – Cup Chicken Stock
1-2 Tsp – Red Hungarian Paprika (Sweet)
1-2 Tsp – Worcestershire Sauce
1-2 Tsp – Crystal (Hot Sauce)
Freshly Ground or Coarsely Ground Black Pepper
Juice of 1 Lemon
¼ Cup Dry White Wine (my twist – optional)
