Enjoy the chicken on a vetkoek or make a delicious toasted sandwich with it.
Instructions:
Over medium heat cook onions in oil until soft.
Add chicken and turn down heat to medium-low.
Cook on all sides and add lemon juice and water. Cover and let it cook for 10-15 minutes or until chicken is cooked through.
Shred chicken with two forks and turn heat to low.
Add salt, pepper, curry, masala, cumin, garlic, ginger smoked paprika and cayenne pepper. Mix through and cook for 5 minutes.
Add parsley, tomato sauce and chutney. Mix well.
Add mayonnaise and let it cook for 5 minutes.
Remove from heat.
Pile onto a buttered brötchen?bread/vetkoek and top with cheese.
Serve and enjoy.
Serve with Greek salad or chips
(Use habanero sauce for some heat or add chillies)
