Shakshuka – Eggs are poached in a delicious tomato sauce, very easy to prepare, healthy, comforting, flavorful, wonderful colors, definitely a must try recipe. It is usually served for breakfast, though I think itβs perfect for any meal of the day. This dish is best served right away after cooking alongside some rice, crusty bread or pita.

Ingredients
Makes about 4-6 servings
Extra virgin olive oil – 1/8th cup
Organic eggs – 8
Ripe Tomatoes(can be bruised ones too), diced – 7
Medium onion, diced – 1
Cloves garlic, minced – 3-5 (I love to add more)
Smoked Paprika – 1 tsp
Red Chilli Paste (Harissa) – 1 1/4 tsp (You want more spicy add more)
Salt and freshly ground black pepper
Fresh parsley/cilantro/dill for garnish
Jasmine Rice – 2 cups (You can go with any side like pita, bread etc)
1. Heat olive oil in a 12 inch (30cm) frying pan over medium heat. Add garlic and cook for 1 min. Add onion and cook for about 5 minutes until the onion begins to soften.
2. Add Smoked Paprika and cook for 1 min
3. Add and stir in diced tomatoes. Season with salt and pepper and allow to simmer over medium heat for 10-15 minutes until it starts to reduce. Adjust the seasonings according to your taste. Keep stirring occasionally.
4. Crack the eggs over the tomato mixture, one in the middle and 7 around the edges of the pan. Cover the pan and simmer for 5 minutes (for runny yolk), or until the eggs are cooked.
5. Garnish with fresh parsley or cilantro and serve with rice, crusty bread or pita.
