Ingredients:
Olive(Zaitoon) oil 2 tbsp
Red onions (chopped) 1
Bell pepper (chopped) 1
Garlic(Lehsan) 2 tbsp minced
Salt (Namak) 1/2 tsp
Paprika 1 tsp
Cumin (Zeera) powder 1 tsp
Cayenne pepper 1 tsp
Tomato (Tamatar) paste/ chopped 400g
Eggs (Anda) 4
Coriander (Hara dhania) for garnishing
Directions:
1) In a skillet, add olive oil and red onions and fry till light brown.
2) Then add bell pepper and garlic and mix well.
3) Add salt, paprika, cayenne pepper and cumin powder and mix.
4) Add tomato paste or chopped tomatoes and stir for 5-8 mins on medium flame.
5) Make 4 wells in the sauce and crack one egg in each.
6) Bake at 180°C until the eggs are set. and garnish with chopped coriander.
7) Enjoy!
