Shakshuka – is a popular Middle Eastern dish of eggs are poached in a delicious tomato sauce. Its very easy to prepare. Its healthy, flavorful and have wonderful colors. It is usually served for breakfast, though I think it is going well in the lunch or dinner with the rice also. This dish is best served right away after cooking with bread or rice.

Ingredients:
~Olive oil – 2 Tbsp
~Onion – 1 Cup
~Garlic – 2-3 Cloves
~Salt – 1 Tsp
~Turmeric powder – ½ Tsp
~Chili powder – ½ Tsp
~Cumin powder – ½ Tsp + ½ Tsp
~Coriander powder – ½ Tsp
~Paprika – ½ Tsp
~Tomato – 1 ½ Cup
~Capsicum – ¼ Cup
~Sugar – 1 Tsp
~Green Chili – 2-3
~Egg – 3
~Fresh Cilantro as per taste
~Water – ¼ Cup

Directions:
1. Heat olive oil in a frying pan over medium heat. Add onion and cook for about 5 minutes until the onion begins to soften. Stir in garlic.
2. Add salt, turmeric, chili, coriander, cumin powder and a little bit of water. Cook the spice 5 minutes.
3. Add tomato and capsicum and continue to cook for 5-7 minutes over medium heat until softened
4. Season with paprika, sugar, green chili and cumin powder and allow to simmer over medium heat for 5 minutes until it starts to reduce. Adjust the seasonings according to your tastes, add more chili for a spicier sauce or sugar for a sweeter one.
4. Crack the eggs over the tomato mixture, 3 around the edges of the pan. Cover the pan and simmer for 10-15 minutes, or until the eggs are cooked.
5. Garnish with fresh cilantro and serve with crusty bread. Enjoy!
