HOMEMADE MASHED POTATOES RECIPE:

INGREDIENTS:

6-8 medium russet potatoes, peeled and cut in large cubes
Evaporated milk
Buttermilk (optional)
Butter (1/2 cube)
Sour Cream (1/4 cup)
Garlic Salt 1 tsp.
Salt and Pepper, to taste
Fresh chopped/minced green onions (optional)
2 cups finely shredded cheddar cheese (optional)

Boil potatoes, covered in water in a large saucepan or large pot. Add a tsp. of salt. Cover and cook potatoes until tender, about 20 minutes, on low heat. Drain water and immediately put into large mixer with the whipping attachment.

Add some butter, buttermilk, a dab of sour cream, and begin whipping. Add evaporated milk a little at a time until the right consistency. Potatoes will thicken as they cool. Add a tsp. of garlic salt, salt and ½ tsp. of pepper, then adjust seasonings, as needed. If you are not serving gravy, you may wish to add green onion and cheese for added color and flavor.

*This recipe is pretty much trial and error with the different ingredients, but they all add that extra creaminess that makes these potatoes special for any occasion.

TURKEY GRAVY RECIPE:

INGREDIENTS:

Drippings from roasted turkey
¾ cup water mixed with ½ cup flour
Salt
Pepper
Turkey broth made from giblets/turkey neck

Roast turkey using the High Temp method. Take the turkey innards (giblets, neck, etc) and place in a small saucepan covered with water and simmer on low for ½ hour to make broth. When turkey is done there should be about 1-2 cups of turkey drippings. After removing turkey, put drippings in a large saucepan and bring to low boil.

In a 2 cup glass measuring cup measure the water and add flour and whisk together until there are no more flour lumps, until smooth. Thin, as needed, with water. Add the broth made from the turkey innards. Slowly add the flour/water mix to the simmering turkey drippings, adding only a little at a time until desired gravy consistency. Add salt and pepper as needed. However, the drippings should already by highly seasoned from the turkey and you may not need added salt, etc.
