Ingredients for 3 serves:
• 1 Onion
• 1 Tomato
• 2 tbsp Olive Oil
• 3 Garlic Cloves, minced
• 1 tsp Sweet Paprika
• 1 tsp Turmeric
• 200g/ 1 Cup Paella/Risotto Rice
• 3 tbsp White/Rose Wine
• Salt
• Black Pepper
• 600ml/ 2 & 1/3 Cups Vegetable/Chicken Stock
• 1 Lemon
• Fresh Thyme
• 200g/ 2 Cups Seafood
Step 1
Chop the onion and the tomato into small cubes and add them in separate small bowls. Heat the olive oil and add the chopped onion. Soften it for 5 minutes, stirring occasionally. Add 3 minced garlic cloves and cook them for 2 more minutes. Add the sweet paprika, the turmeric, stir and then add the rice. Stir until the rice has a beautiful yellow color. Add the wine and cook until the wine is evaporated.
Step 2
Add the chopped tomato and stir for few seconds. Season with salt and pepper and then add the stock in 2 batches. Stir occasionally. Add the green thyme and let it cook for 5 minutes. Add the squid if you have it and then after 10 minutes add all seafood. Once done, turn off the heat and add few slices of lemon, cover and let it rest for 5 minutes.
Squeeze some lemon on top once you serve this delicious paella!
